Sweet & Healthy Breakfast Ideas | Vegan
I haven't written a vegan based post in a while, and the breakfasts I've prepared this past week have been too good to pass up for a post! (I mean, just look at these photos..)
The first is a simple yet equally amazing fruit 'platter' consisting of:
- 1 1/2 mangoes cut into squares
- 2 kiwis, skin removed
- 3 large strawberries (you can load up on these!)
The sugar will give you an energy boost whilst satisfying morning hunger and daytime sugar cravings as well. A savoury breakfast is of course better, but if you're going to eat something dessert-worthy make it fruit!
Next up is a more complex and impressive recipe, along the same lines. This is not as sweet believe it or not, but it could in fact be made as a healthy dessert. I am quite proud if I do say so myself, of the presentation. The batter mix is a simple concoction of wholemeal flour, olive oil, baking soda, salt, almond milk and crushed banana. I used:
- a banana
- 1 cup of almond milk
- a tablespoon of milled linseed
- 1 tablespoon of coconut sugar
- a bowl of blueberries
- 1 sliced banana
- drizzle of date nectar
The recipes can surely be found online, in a more intricate description but once you've made it, you'll see how simple they really are. For summer these are perfect, and when I served my family, they were really impressed too. The banana in the pancake mixture really makes it more moist and soft, yum! Even though I hate the word moist...
