What I Eat In A Day | Vegan Snacks

 I find that savoury snacks throughout the day (in between the two main meals) are most filling and so I don't reach for any junk food. This week's favourite are oven baked chips. They are pretty easy to make but look quite impressive, and satiate your appetite, rather than reach for chocolate etc!

I've put the step by step (albeit easy) guide to how I make them below:

  • Cut four to five potatoes (medium size) into strips, I don't have a particular method, just cutting across with a sharp knife.
  • Apply spritzes of oil to a baking tray or use a sheet, and place them in rows to use up as much space as possible. 
  • Preheat the oven to 200 degrees (about gas mark 4) and sprinkle thyme over the chips. The oil should also help this stick.
  • Place them in for about 20 minutes, to get crispy without burning. Then use three to four iceberg lettuce leaves on the plate. This is more for aesthetic, but you get one of your five a day here!
  • Apply a tablespoon of vegan garlic mayonnaise or whatever condiment you like, with some ketchup so it's like indulging in fast food fries.

That's it - it's a simple recipe but tastes amazing without being unhealthy. If I could be bothered, I'd do this four to five times a week as a starter or side dish for dinner.
