Thai Green Curry Vegan Soup

Someone recently commented on my instagram asking for a recipe for this delicious soup, and so I thought a quick blog post would be interesting for you guys! This is of course vegan, so it's suitable for everyone. 
As a uni student I'm often short on time, so cooking can be a challenge. This is very easy, if you can be bothered to mash things up, then you don't even need a blender or nutribullet.

So this recipe is called Thai Curry Green Soup. *low on the curry*

It's quite a basic recipe, so you can mix and match different ingredients if these don't take your fancy:

  • I use onion, garlic, lemongrass (leave it in until boiling point) green curry paste, coconut milk, a hint of lime if you want a more sour taste and boiled water just to make the texture more like a soup than a sauce.
I then boil rice separately and add it in, it's quite simple and shouldn't take more than 15 minutes.
