Vegan Comfort Food | Baked Chips

Today marks about five weeks of being vegan, and since then I've been way more adventurous with my cooking and combinations of food. 

Today I'll be showing you guys a quick and easy side dish, that doubles as comfort junk food.
Chips are seen as 'fattening' and unhealthy but when they're homemade, that's almost impossible. 

Keep reading for the ingredients, and let me know if you try these out.


Ingredients:



  • 3 Large Potatoes
  • Thyme
  • Olive Oil
  • Salt


Directions:
Cut the potatoes into strips and place them in rows on a baking sheet, preheat the oven to 200˚C or Gas Mark 6 (400˚F in the US) 
Drizzle half a tablespoon of oil on the potatoes, just enough to make sure they don't stick to the sheet.
Sprinkle thyme (any herb or spice will do) over the pieces, the oil will also help them stick and a little salt for flavour.
I then put them in for 20 minutes, but keep checking back as you'll see below some of them were burnt!



I then added a side of ketchup and voila! This is only a few hundred calories and will fill you up for a few hours. I think it definitely beats Mcdonalds chips, maybe because you made it yourself so it feels more impressive.
