Simple & Healthy Pita Wraps

Hey girls,

 Today I have a little recipe for you guys. The picture below really doesn't do the wraps justice. As with all Mediterranean foods, it was super colourful and had lots of vegetables so there's no guilt here!

I added courgettes, red onion, tomatoes, mushroom and goat's cheese which I fried together. 

It was very simple, and takes 5-10 minutes. Then I heat up the pita bread on the grill for one minute and presto.
For an added kick you can add red wine vinegar to the onions before adding the other vegetables. I also prefer extra virgin olive oil rather than cooking oil.
